Ingredients for 4 servings:

  • 4 redfish fillets
  • 2 shallots
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green
  • 1 large zucchini
  • 100 g olives, black, without stones
  • salt and pepper
  • Basil and parsley, dried
  • lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Season the fish fillets well on both sides with salt and pepper and drizzle with lemon juice. Peel and finely chop the shallots, and sauté them in a little olive oil until translucent. Meanwhile, dice the bell peppers and thinly slice the zucchini. Add the bell peppers and zucchini to the shallots and sauté. Add the olives and a little lemon juice, and season with basil, parsley, salt, and pepper. Place the fish fillets in a baking dish and arrange the vegetables on top. Drizzle with a little more lemon juice. Bake at 200°C for about 25 minutes.
