Ingredients for 2 servings:
- 200g spaghetti
- 50 g ham, diced
- 1 tbsp butter
- 1 jar white wine, dry
- 2 eggs
- Parmesan, freshly grated
- 1 tsp parsley, chopped
- Black pepper, freshly ground

classic, without cream!
Melt the butter and fry the ham cubes in it. Deglaze with wine and simmer gently for about 5 minutes. Meanwhile, cook the spaghetti until al dente. Warm a serving bowl by adding boiling water or in the oven. Whisk the eggs with 2 tablespoons of Parmesan, parsley, and pepper. Once the spaghetti is cooked, transfer the egg mixture to the hot bowl, immediately add the hot spaghetti, and mix everything together. Then add the ham cubes and mix everything together again. If you like, sprinkle some extra grated Parmesan over the finished dish.
