Canadian Nanaimo Bars

Ingredients for 1 servings:

  • 150 g butter biscuits
  • 115 g butter, unsalted, melted
  • 50 g sugar
  • 5 tbsp cocoa powder
  • 100 g desiccated coconut
  • 115 g butter, soft, unsalted, melted
  • 35 ml whipped cream
  • 2 tbsp vanilla pudding powder
  • 230 g powdered sugar
  • 100 g chocolate, chopped
  • 20 g butter, unsalted, melted

Whisk the egg. Crumble the butter cookies in a bag (I like to do this with a rolling pin, but other kitchen utensils will work, too). For the base layer, in a medium saucepan, combine melted butter, sugar, and cocoa powder. Add the beaten egg and cook over low heat, stirring constantly, until thickened. Remove the pan from the heat and stir in the cookie crumbs and desiccated coconut. Press the mixture evenly into an ungreased, square baking pan (about 20 cm). For the middle layer, in a bowl, combine softened butter, heavy cream, pudding mix, and powdered sugar until creamy. Spread this mixture evenly over the base layer and refrigerate. For the top layer, in a small saucepan, melt the chocolate and butter over low heat and stir until smooth. Spread this chocolate mixture over the chilled middle layer. Refrigerate the entire dessert until the chocolate layer is firm. To serve, cut the Nanaimo bars into squares and enjoy. Store leftovers in the refrigerator.
