Ingredients for 6 servings:

  • 300 g flour (wholemeal flour)
  • 4 egg yolks
  • 1 egg(s)
  • 1 tsp salt
  • 2 tbsp olive oil
  • 800 g minced meat
  • 2 onions
  • 2 garlic cloves
  • Olive oil, for frying
  • 5 tbsp ketchup
  • 500 g mushrooms, fresh
  • 200 g cream cheese
  • e.g. mozzarella
  • salt and pepper
  • Cayenne pepper
  • oregano

Peel and finely chop the onions and garlic cloves. Fry in a little olive oil until translucent. Add the minced meat and brown. Season generously with ketchup, oregano, salt, pepper, and cayenne pepper. In a second pan, fry the sliced ​​mushrooms. Discard any remaining water and add the mushrooms to the minced meat. Stir in the cream cheese. Knead the flour, egg, egg yolk, salt, and olive oil into a pasta dough. Add a little water if necessary to make it firm and roll out. Roll out the dough thinly and cut into rectangles. I used 10 rectangles. Pre-cook these rectangles in simmering water for about 1-2 minutes. Drain. Cover with the minced meat mixture and roll into logs. Place in an ovenproof baking dish and pour over the remaining meat sauce. If desired, cover with mozzarella and bake at 200°C for about 20 minutes.
