Ingredients for 2 servings:
- 200 g spinach, seasoned, frozen
- 200 g Skyr
- 100g Gorgonzola
- 3 lasagna sheets
- 3 slices of ham
- 1 can tomatoes, chopped, with herbs
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes
Thaw the seasoned spinach, stir in about 3 tablespoons of skyr and half of the Gorgonzola, adding a splash of water if desired. Salt the tomatoes if desired. Cover the bottom of the baking dish with some of the tomatoes. Let the lasagna sheets soften in hot, salted water. Cut the lasagna sheets in half. Cut the ham slices in half. Place some of the spinach filling on each lasagna sheet and roll them up. Repeat with the ham slices. Alternate one ham roll and one lasagna roll in the baking dish. Sprinkle the remaining tomatoes on top. Dilute the remaining skyr with a little water and season with pepper. Spread over the tomatoes. Crumble the remaining chopped Gorgonzola over the top. Bake at 220°C for 30-40 minutes. Approx. 600 kcal per serving.
