Ingredients for 4 servings:
- 100 g butter
- 250 g onion(s)
- 1 tbsp flour
- ½ liter broth
- ⅛ liter cream (whipping cream)
- 70 g capers, pickled in brine and 125 ml of the brine
- some mustard, hot
- some salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Goes well with turkey breast or other pan-fried dishes.
Briefly sauté the diced onions in butter. Dust with flour and pour in the broth, whipped cream, and caper brine. After about 10 minutes of cooking, puree with a hand blender. Season with mustard and pepper. Bring back to a boil, blend vigorously, and sprinkle in the capers. Season with salt.
