Cappuccino Cherry Muffins

Ingredients for 1 servings:

  • 1 jar sour cherries
  • 300 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 40 g coffee powder (cappuccino chocolate)
  • 6 tbsp water, hot
  • 2 eggs
  • 120 g sugar
  • 80 ml oil
  • 200 g yogurt
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the cherries thoroughly. Mix the flour, baking powder, and baking soda thoroughly. Bring the water to a boil, take 6 tablespoons of it, and dissolve the cappuccino powder in it. Beat the eggs and sugar until frothy. Add the oil and yogurt, then the cappuccino. Fold in the flour mixture, followed by the cherries. Preheat the oven to 190°C. Pour the batter into muffin tins or paper baking cups and bake for 20-25 minutes. Once cooled, dust with powdered sugar. Yields approximately 20 muffins, depending on the size of the tin.
