Ingredients for 4 servings:

  • 4 tomatoes, ripe
  • 2 mozzarella
  • 2 eggs
  • 3 tbsp balsamic cream
  • 3 tbsp flour
  • 100 g breadcrumbs
  • Basil, fresh
  • Salt
  • pepper
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Tomato-Mozzarella

Wash the tomatoes, pat dry, and cut each into 3 thick pieces. Coat first in flour, then in the beaten eggs and breadcrumbs. Press the breadcrumbs firmly into the pan. Cut each mozzarella ball into 4 slices. Remove the basil leaves from the stems, wash, and pat dry. Heat plenty of oil in a pan and fry the breaded tomato slices for about 3 minutes on each side until golden brown. Alternate layers of tomatoes, mozzarella, and basil. Season and drizzle with balsamic vinegar and oil.
