Caramel apple cake with pecans

Ingredients for 1 servings:

  • 2 large apples
  • 3 tbsp lemon juice
  • 125 g butter
  • 1 pinch of salt
  • 125 g brown sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 200 g flour
  • 1 packet of baking powder
  • 3 tbsp cream
  • 1 pack pudding powder (caramel pudding)
  • 150 g sour cream
  • 1 egg(s)
  • 50 g brown sugar
  • 1 handful of pecans
  • 1 tbsp honey

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 35 minutes

Peel, core, and eighth the apples, and drizzle with lemon juice. Melt the butter, mix with 125g of sugar, vanilla sugar, and a pinch of salt. Add 3 eggs, combine the flour and baking powder, and stir into the mixture along with the cream. Pour the batter into a greased 26cm springform pan and arrange the apple slices on top. Bake in the oven at 175°C for 15 minutes. For the caramel topping, mix the pudding mix, sour cream, sugar, and egg, pour the mixture onto the cake, and bake for another 50 minutes. Chop the pecans lengthwise and toast them in a dry pan, stirring in the honey. Let it caramelize and spread it on the still-warm cake.
