Ingredients for 1 servings:
- 250 g flour
- 150 g butter
- 200 g sugar
- 1 egg yolk
- 1 tbsp lemon juice
- Salt
- 125 ml cream
- 75 g honey
- ½ tsp cinnamon

enough for about 80 pieces
Knead together the flour, butter, 100g sugar, egg yolk, lemon juice, and salt. Wrap in foil and chill for about 30 minutes. Preheat the oven to 180°C (top/bottom heat: 160°C). Shape the dough into about 80 balls and place them on a baking tray lined with baking paper. Use a spoon handle to make indentations in each one. Place the tray in the hot oven and bake for about 15 minutes. Add the remaining sugar to a small non-stick pan or saucepan and let it caramelize. Stir in the cream, honey, and cinnamon. Bring everything to a boil, then simmer for about 5 minutes. Finally, pour the mixture into the indentations and let it set.
