Ingredients for 3 servings:

  • 600 ml milk
  • 30 g cornstarch
  • 80 g sugar
  • ½ vanilla pod(s)
  • 2 egg yolks
  • 1 pinch of cinnamon
  • 1 dashes lemon juice
  • 1 pinch of salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 17 minutes

Scrape out the vanilla pod and place the seeds and pod in a saucepan with 500 ml of milk. Heat. Put the sugar in another saucepan and melt, stirring occasionally. Caramelize until golden brown. Pour in the hot vanilla milk and simmer gently until the caramel has dissolved. Meanwhile, mix the cornstarch with 100 ml of milk and the egg yolk until smooth. Once the caramel has dissolved, slowly stir in the egg-starch mixture and continue stirring vigorously until thickened. Season to taste with cinnamon, salt, and lemon juice. Pour into a beautiful glass bowl and serve hot or cold, depending on your taste.
