Caramelized balsamic onions

Ingredients for 2 servings:

  • 4 m.-sized onion(s)
  • 2 tbsp, heaped cane sugar
  • 80 ml balsamic vinegar
  • Olive oil, for frying
  • salt and pepper

Working time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 50 minutes

Recipe from a friend, ideal for Rösti or on burgers

Peel the onions and slice them into approximately 0.5 cm wide slices. Sauté them in high-temperature oil until golden brown. Add the cane sugar, salt, and pepper. The sugar dissolves quite quickly. Add the balsamic vinegar and reduce the heat, stirring occasionally. The balsamic vinegar needs enough time to reduce and impart its flavor to the onions; the consistency should be thick and honey-like. So allow plenty of time; it’s worth it.
