Caramelized rice pudding with banana

Ingredients for 2 servings:

  • 500 ml milk
  • 1 vanilla pod(s), halved lengthwise
  • 2 tbsp sugar
  • ½ orange(s), finely grated peel
  • 125 g rice pudding
  • 2 bananas
  • 1 tbsp brown rum
  • 5 tbsp brown sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 10 minutes

Bring the milk, vanilla pod, sugar, and orange zest to a boil in a small saucepan. Stir in the rice, cover, and let it swell over low heat for 30 minutes, stirring frequently. Spoon the rice into small bowls and level the surface. Let it cool until lukewarm. Peel the bananas and halve them, first lengthwise, then crosswise. Toss in the rum, then place two bananas on top of the rice, pressing them in. Sprinkle with the brown sugar. Heat the pan over a blowtorch until the sugar melts and caramelizes. Let it cool briefly and serve.
