Caramelized spelt semolina porridge

Ingredients for 4 servings:

  • 200 g semolina (spelt semolina)
  • 3 tbsp cane sugar
  • 2 tbsp butter
  • 1 tsp, smothered cinnamon
  • 1 pinch of salt
  • 1,200 ml water
  • 200 ml cream
  • Cinnamon sugar or maple syrup

For the caramel, melt the butter and sugar in a saucepan over moderate heat. Add the cinnamon and sauté briefly (until it smells faintly of a Christmas market). Add the water and cook the caramel while stirring until it dissolves. Then add the cream, salt, and semolina. Bring to a boil while stirring, turn off the heat, cover the pot, and let the spelt semolina swell for about 30 minutes. Serve with cinnamon and sugar or maple syrup, if desired. The semolina porridge tastes good both hot and cold. If serving cold, pour it into molds (silicone is best) and let it cool in the refrigerator. Spelt semolina has a nuttier flavor than wheat semolina and is available in well-stocked supermarkets and organic food stores.
