Ingredients for 1 servings:

  • 1 kg banana(s)
  • 100 ml orange juice, preferably freshly squeezed
  • 1 pack of flavoring (orange peel)
  • 500 g gelling sugar 2:1
  • 250 g coconut milk
  • 15 g desiccated coconut
  • 40 ml white rum

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Banana-orange jam with coconut milk

Peel the bananas (should be around 700g) and cut into 1cm pieces. Place in a tall saucepan. Immediately pour in the orange juice to prevent the bananas from browning. Add the remaining ingredients, except the rum. Bring to a boil, stirring constantly. Follow the package instructions for the gelling sugar. Remove the pan from the heat. Now add the rum. Purée the mixture with a hand blender. Bring to a boil again, stirring continuously. Immediately pour into prepared twist-off jars.
