Ingredients for 4 servings:

  • 2 lettuce hearts (mini romaine lettuce) or 1 iceberg lettuce or lettuce
  • 1 bell pepper(s), yellow
  • 2 m.-large carrot(s)
  • 2 tomatoes (Roma)
  • 1 can mandarin oranges OR
  • 2 mandarin oranges, fresh
  • 5 tbsp buttermilk
  • 1 tbsp vinegar (apple cider vinegar)
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp mustard, medium hot
  • 1 tsp oil
  • Salt
  • Pepper, white

Working time approx. 30 minutes; Total time approx. 30 minutes

delicious homemade dish with mandarins, tomatoes, carrots and peppers

Cut the lettuce hearts into strips, wash them, and spin them dry thoroughly. Wash, trim, and dice the yellow bell peppers. Peel and coarsely grate the carrots. Wash, quarter, and slice the Romaine tomatoes. Drain the canned mandarins and slice them even smaller, if desired, or peel the fresh mandarins, cut them into wedges, and slice them finely. You can also use 1 can of peaches or 2 fresh nectarines. For the dressing, combine the buttermilk, lemon juice, apple cider vinegar, honey, mustard, and oil and season with salt and pepper, not too much. Mix everything together!
