Carrot and apple salad with cream cheese dressing

Ingredients for 4 servings:

  • 750 g carrot(s)
  • 2 large apples
  • 200 g cream cheese, natural
  • 1 tbsp creamed horseradish
  • 2 tsp mustard, not hot
  • 3 tbsp white balsamic vinegar
  • e.g. salt and pepper
  • 2 tbsp oil as desired

Peel and grate the carrots. Peel and grate the apples. Mix the cream cheese, horseradish, and mustard with the vinegar and season with salt and pepper to taste. Add more horseradish or mustard if desired. Finally, stir in the oil until you have a smooth dressing. Now mix the carrots, apples, and dressing. The salad will taste even better if it’s refrigerated!
