Ingredients for 2 servings:
- 4 large carrots
- 60 g peanuts, salted
- 2 tbsp vinegar (sherry vinegar), or wine vinegar
- 2 tbsp oil (peanut oil)
- 1 tsp oil (sesame oil from roasted sesame)
- possibly salt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the carrots, coarsely grate them into a bowl, and stir in the whole peanuts. Combine the oils and vinegars (sesame oil is very important for flavor) and drizzle over the salad. Season with salt, if desired. Eat as fresh as possible. It tastes incredibly fresh and nutty.
