Carrot and potato stew

Ingredients for 4 servings:

  • 2 onions, halved
  • 30 g oil
  • 120 g bacon, diced
  • 600 g potatoes, floury, diced
  • 600 g carrot(s), sliced
  • 1 tbsp marjoram or lovage
  • 1 tbsp sugar
  • 1 tsp, leveled salt
  • 3 pinches of pepper
  • 300 g water
  • 1 cube of vegetable stock

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for the Thermomix TM31 – gluten-free

Add the onions to the mixing bowl and chop for 3 seconds/speed 5. Add the oil and sauté for 3 minutes/speed 1 on the Varoma setting. Add all the remaining ingredients to the mixing bowl and cook for 25 minutes/100°C/speed 1. Gently stir the stew for about 3-5 seconds/speed 3-4. The carrots should still be chunky. Tip: We omit the bacon and use meat broth instead of vegetable stock. Lovage instead of marjoram also adds a bit of flavor.
