Ingredients for 1 servings:
- 200 g wholemeal spelt flour
- 200 g rye meal
- 100 g oat flakes
- 100 g oat bran
- 50 g walnuts, roughly chopped
- 100 g carrot(s), grated
- 1 packet of fresh yeast
- 2 tbsp balsamic vinegar
- 2 tsp salt
- 1 tbsp honey
- 1 tsp cocoa powder, unsweetened
- 400 ml water, lukewarm, if necessary a little more

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
quick, dark wholemeal bread
Dissolve the yeast in some of the lukewarm water. Add the flour, rye flour, walnuts, carrots (do not squeeze), oats, oat bran, salt, vinegar, cocoa, and honey to the dissolved yeast. Knead all ingredients and slowly add the remaining lukewarm water until a firm dough forms. Form a loaf and place it on a baking sheet in the middle of a cold oven. Set the oven to 200 degrees Celsius (top/bottom heat) and bake for one hour.
