Carrot casserole

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 2 onions
  • 1 clove(s) garlic
  • 3 eggs
  • 50 g cheese (Gouda)
  • 1 tbsp butter
  • 100 ml cream
  • 200 ml milk
  • 1 bunch of parsley, or 1 pack of frozen herbs
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat oven to 200°C. Peel the carrots and grate them finely or coarsely, depending on your preference. Finely dice the onions and garlic. Finely chop the parsley. Grate the cheese. Melt the butter in a large pan, sauté the onions and garlic until translucent. Briefly sauté the parsley. Add the carrots and sauté. Season with salt and pepper. Place the carrot mixture in a bowl. Sprinkle the cheese over the top and mix quickly. Place everything in a casserole dish. Whisk the eggs, add the milk and cream. Pour the mixture over the casserole. Bake the casserole for about 30 minutes. A simple dish that’s quick to prepare and tastes delicious – whether as a side dish or as a main course. We serve it either with baked potatoes and a green salad, or with meatballs and boiled potatoes.
