Ingredients for 2 servings:
- 6 large carrots
- 5 eggs
- 150 ml milk
- salt and pepper
- nutmeg
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Low carb, no cheese, no cream
Wash and peel the carrots, and trim the ends. Using a vegetable peeler, slice the carrots into strips. Whisk the eggs with the milk and spices. Mix the egg mixture with the carrot strips and pour into a casserole dish. Bake in a preheated oven at 200°C (convection oven) for about 45 minutes. If the topmost carrots start to brown, cover the casserole with aluminum foil and continue baking.
