Carrot-potato-cheese mash

Ingredients for 2 servings:

  • 500 g carrot(s), peeled
  • 300 g potatoes, peeled
  • 1 onion(s)
  • ¾ liter vegetable broth
  • some nutmeg
  • 100 g cheese, grated
  • some pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely dice the carrots, potatoes, and onion and simmer in the vegetable broth for 20 minutes with the lid on. Reduce the heat to low and mash or puree with a potato masher or immersion blender to the desired consistency. I like to leave some coarse pieces. Season with nutmeg and pepper, sprinkle with the cheese, and stir in gently.
