Carrot Raisin and Pecan Bread

Ingredients for 1 servings:

  • 240 g flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp allspice, ground
  • ½ tsp salt
  • 2 m.-large carrot(s), finely grated
  • 60 ml oil
  • 1 egg(s)
  • 1 egg white
  • 170 g sugar
  • 60 ml condensed milk
  • ½ packet of vanilla sugar
  • 50 g raisins
  • 50 g nuts (e.g. pecans)
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat oven to 175°C. Grease a bread pan. Combine the flour, baking powder, spices, and salt in a bowl and mix. In another bowl, combine the grated carrots, oil, egg, egg white, sugar, condensed milk, and vanilla sugar. Add this mixture to the dry ingredients and mix well. Finally, fold in the raisins and nuts. Pour the mixture into the bread pan and bake for about 1 hour. Remove from the oven and let cool completely. Note: The baking time depends on the oven and may be longer or shorter. Do the skewer test.
