Ingredients for 1 servings:

  • 120 g sugar
  • 120 g flour
  • 1 tsp baking powder
  • 3 eggs
  • 2 cups of cream
  • 2 cups sour cream
  • 1 pack of drink powder of your choice (Quench)
  • 6 sheets of white gelatin
  • 1 pack of cake glaze, red
  • Fruit of your choice and season

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

For the base, separate the eggs. Beat the egg whites until stiff, gradually adding the sugar. Stir in the egg yolks. Mix the flour with the baking powder and carefully fold in. Pour the batter into a prepared springform pan. Bake in a preheated oven at 150°C – 180°C for approx. 20-25 minutes. Allow to cool. For the topping, whip the cream until stiff. Stir in the sour cream and quench. Soak the gelatine in cold water. Then squeeze it out, dissolve it, and stir it into the mixture. Allow to cool. Now cover the base with prepared fruit of your choice and in season, and with the drink powder depending on your flavor. Spread the quench mixture on top. Make a cake glaze according to the package instructions and pour it over the mixture. Alternatively, you can first spread the quench mixture on the fruit base, then spread the fruit on top, and finally pour the quench mixture over the cake glaze. Refrigerate until ready to serve. The cake tastes particularly good on hot days.
