Ingredients for 6 servings:
- 600 g carrot(s)
- 4 tbsp white wine vinegar
- 1 tbsp mustard
- 1 tbsp lemon juice
- 6 tbsp olive oil or other oil
- salt and pepper
- Parsley, chopped

delicious, healthy and very simple salad
Grate the carrots. Combine salt, pepper, and mustard in a bowl and mix with the vinegar and lemon juice. Stir in the oil and olive oil while stirring. Add the carrots to the dressing. Sprinkle with chopped parsley when serving. Tip: If olive oil is too strong for your liking, use neutral oil. If you prefer, add finely chopped onions to the carrots.
