Ingredients for 2 servings:

  • 6 thick carrots
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • some salt and pepper

simple and quick carrot salad

Peel the carrots, grate them into medium-sized pieces, and place them in a bowl. Now mix the olive oil, vinegar, and lemon juice (amounts to taste) with the grated carrots. Season with salt and pepper.
