Carrot salad with ginger vinaigrette

Ingredients for 2 servings:

  • 400 g carrot(s)
  • 2 tbsp lemon juice or lime juice
  • ½ shallot(s), very finely diced
  • 1 tbsp coriander, finely chopped
  • 20 g ginger, freshly grated
  • Sugar
  • 1 tbsp oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Indian style

Peel the carrots and grate them or cut them into thin sticks. Whisk the remaining ingredients for the vinaigrette and pour over the carrots. Garnish with coriander leaves.
