Carrot salad with lemon cream

Ingredients for 1 servings:

  • 1 kg carrot(s)
  • 1 lemon(s), the juice
  • 100 ml cream
  • 2 tbsp sugar
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and grate the carrots. Beat the lemon juice with the sugar and salt in a mixer on high speed until the sugar is dissolved. Continue beating and add the cream in a thin stream (not all at once, or it will curdle). Fold the lemon cream into the carrots and serve immediately.
