Carrot salad with peanuts

Ingredients for 4 servings:

  • 4 carrots
  • 1 can peanuts, salted, roasted
  • 5 tbsp vinegar (mango balsamic vinegar)
  • 2 tbsp oil (peanut oil)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the carrots and finely grate them. Add the peanuts. Season gently with salt and pepper, as the peanuts are already salty. Stir in the vinegar and oil. Goes great with grilled food. Tip: For another variation, I like to add a little curry powder.
