Ingredients for 1 servings:

  • 1 bunch of carrot greens
  • 100 g almonds
  • 1 tbsp nutritional yeast
  • 100 ml olive oil
  • 1 tsp vegetable broth
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

Wash the carrot tops and remove any coarse stems. The tops should be as fresh as possible and not wilted. Lightly roast the almonds in a pan without oil. Roughly chop the tops and place them in a tall bowl with the almonds. Blend with a hand blender. Gradually add the olive oil until the desired consistency is reached. (The oil quantity is only a rough guide.) Season the pesto to taste with salt, pepper, nutritional yeast, and vegetable broth. Serve with pasta.
