Ingredients for 4 servings:
- 800 g carrot(s)
- 50 g butter
- some sugar
- 200 g raisins, light
- 20 g barberries
- 1 piece(s) ginger (small piece)
- 2 tbsp water
- Salt
- possibly coriander or parsley, finely chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Peel the carrots and cut them into 1/2 cm thick slices or sticks. Toss them in butter and a little sugar. Add the raisins, barberries, and finely chopped ginger. Pour in 2 tablespoons of water and simmer in a covered pan. Season to taste with salt and a little sugar, and garnish with coriander or parsley if desired.
