Ingredients for 4 servings:
- 500 g broccoli
- 100 g cashew nuts
- 1 pepper, red, possibly more
- 2 garlic cloves
- 4 tbsp olive oil
- 100 g Parmesan or Grana Padano, grated
- some salt and pepper
- some nutmeg
- some thyme
- possibly parsley, chopped
- 4 servings of gnocchi or pasta of your choice
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Roughly chop all ingredients, except the cheese and parsley, in a food processor until everything is about the size of croutons. Then continue blending slowly, adding enough water until smooth. Place everything in a saucepan and simmer gently on the stovetop for about 10 minutes. Or steam for 10 minutes at 100% humidity. Finally, stir in the cheese and serve with gnocchi or pasta. If desired, add about a handful of parsley before serving.
