Ingredients for 2 servings:
- 500 g fish fillet(s) (catfish fillet)
- salt and pepper
- Flour
- 2 stalk(s) leeks
- 2 large oranges
- 2 apples, sour
- 1 m.-sized onion(s)
- butter
- Garlic granules
- Cayenne pepper
- lemon(s)
- Paprika powder, sweet
- oil
- 1 tbsp honey
Instructions

Clean the leek, cut into approximately 5 cm long pieces, and halve each lengthwise. Wash the green parts and also cut into approximately 5 cm long pieces. Blanch briefly in boiling salted water and then drain in a colander. Meanwhile, peel, core, and thinly slice the apple. Peel and fillet the orange, and peel the onion and slice it thinly. Heat a little butter and perhaps a spoonful of honey in a pan and sauté the leek and onion. After a while, add the apple and later the orange segments. Season with salt and cayenne pepper and keep warm. Briefly wash and dry the catfish fillets. Season both sides with salt. Then season one side with a little black pepper and turn the fillets over. Season the other side with garlic granules (I don’t know if fresh garlic is too strong…?), paprika, cayenne pepper, and lemon juice. Dust the fillets with flour, salt and pepper side down. Heat a little butter and oil in a pan. Sear the fillets until crispy on both sides. Serve with a wedge of lemon and, if desired, a few chopped walnuts over the vegetables. … the quantities for leeks and other vegetables are only approximate—they can, of course, be adjusted to suit your taste… perhaps grapes or pears would also go well with this…?
