Ingredients for 4 servings:

  • 300 g pumpkin flesh (Hokkaido), diced
  • 100 g butter or margarine
  • 1 egg(s)
  • 85 g sugar
  • 1 pinch of salt
  • 625 g flour (whole grain)
  • 1 packet of yeast (dry yeast)
  • some saffron threads
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Sauté the diced pumpkin in melted butter, then let it cool slightly. Add the egg, sugar, and salt to the mixture and blend. Let it cool further. Then combine the flour, saffron threads, and yeast with the mixture. Cover and let it rise in the oven at 50°C for one hour. Then pour everything into a greased loaf pan and bake in a preheated oven at 180°C for about 30-40 minutes. Butter and/or jam go best with this.
