Cauliflower mash

Ingredients for 4 servings:

  • 1 head of cauliflower
  • 1 cup of crème fraîche, approx. 150 – 200 g
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 2 bunch of mixed herbs, e.g. parsley, basil, dill etc.
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Divide the cauliflower into small florets. Chop the herbs. Cook the cauliflower in boiling salted water for 15 minutes. Drain the water and mash/mash the cauliflower. Stir in the olive oil and chopped herbs into the mash. Stir in the crème fraîche. Press in the garlic cloves and season generously with salt and pepper. This mash is perfect as a side dish or as a substitute for rice.
