Ingredients for 3 servings:
- 1 small head of cauliflower
- 1 bell pepper(s), red
- 4 carrots
- 1 zucchini
- 1 handful of raisins
- 1 clove(s) garlic
- e.g. ground cumin
- n. B. Cinnamon powder
- e.g. curry powder
- e.g. sea salt
- 30 ml orange juice
- 30 ml olive oil
- Mint, fresh

Couscous Cru – Cauliflower is used as couscous
Finely chop the cauliflower (you can also grate it with a grater), thinly slice the carrots, and thinly slice the zucchini. Place everything in a bowl and add a good handful of raisins. Finely chop 1 garlic clove and add it, along with 30 ml of orange juice and 30 ml of olive oil. Mix everything well, then season the salad with ground cumin (about 1/4 – 1/2 tsp), ground cinnamon (about 1/4 tsp), curry powder (about 1/2 tsp), and sea salt. You can vary the spices according to your taste, so you can add more or less. Finally, you can chop one or two fresh mint leaves and add them to the salad. If you don’t like mint, you can leave it out altogether.
