Ingredients for 1 servings:

  • 100 g cauliflower, steamed
  • 1 egg(s)
  • 25 g wholemeal oat flour, alternatively oat flakes
  • 1 tbsp extra virgin olive oil
  • Salt and pepper, fish from the mill

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Combine all ingredients in a food processor, mix, and grind to a fine consistency. Season the mixture with salt and pepper to taste and let it rest for 10 minutes. Bake the batter in the waffle iron. Depending on your waffle iron, this will take 6-8 minutes. The waffles should be golden brown. They taste best warm from the waffles. I served them with a herb dip. I came up with this recipe when I had a little leftover cooked cauliflower.
