Cauliflower with saffron

Ingredients for 4 servings:

  • 1 tsp saffron threads
  • 4 tbsp water
  • 1 cauliflower (approx. 1 kg)
  • Water, salted
  • ½ lemon(s), juice
  • 50 g butter
  • 1 pinch of saffron powder
  • some parsley or coriander sprigs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the saffron threads in lukewarm water. Divide the cauliflower into florets. Bring salted water with lemon juice to a boil, cook the cauliflower until al dente, remove from the pan, and refresh with cold water. Melt the butter in a saucepan, add the saffron water, soaking water, and saffron powder. Heat the cauliflower evenly, swirling the pan. Serve sprinkled with parsley or coriander leaves.
