Ingredients for 8 servings:
- 1 kg floury potatoes
- 1 lime(s)
- 250 g mayonnaise
- 500 g chicken breast
- 1 avocado(s)
- e.g. salt and pepper
- e.g. parsley
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes
with chicken
For the potato mixture, peel the potatoes and boil them in salted water until tender. Then drain and mash them with a fork or potato masher. Squeeze the lime. Season the mashed potatoes with lime juice, salt, and pepper. For the filling, cook the chicken breast in water with a little salt until tender. Then drain and let cool. When the meat has cooled, use your fingers to tear it into its fibers. Mix the meat with the mayonnaise and season with salt and pepper. Peel the avocado and cut it into small pieces. First, spread half of the potato mixture in a baking dish and press down firmly. Spread the avocado on the potato layer, then pour the chicken and mayonnaise mixture over it. Finally, spread the rest of the potato mixture over the causa and press down firmly again. If desired, garnish the causa with parsley. The causa is served cold. Note: Causa de Pollo is a dish from Peru. The “most important” ingredient, aji amarillo, is not common in Germany, so my recipe is significantly modified.
