Peel the celeriac and cut into 4 slices, approximately 1 cm thick. Then halve the slices to create a “schnitzel” shape. Cook the celery in boiling salted water for about 5 minutes, until it still has a bite. Season the cooked celery with salt, pepper, and a little paprika, just like a schnitzel, and then top with 1/2 slice of ham and 1 slice of cheese. Press down a little to help it stick. Coat the vegetables in egg and breadcrumbs. Fry in hot oil in a pan for about 7 minutes on each side until golden brown. For vegetarians, simply omit the ham or salami.
