Celery fritters

Ingredients for 4 servings:

  • 1,000 g celeriac
  • 1 tbsp lemon juice
  • 3 m.-sized eggs
  • 3 tbsp flour or chickpea flour
  • 4 tbsp oil
  • 4 m.-sized carrot(s)
  • e.g. salt and pepper
  • some nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel and wash the celeriac and carrots, then grate finely or coarsely, to taste. Mix with the lemon juice, eggs, and flour. Season with salt and pepper to taste, and finish with nutmeg. Fry the mixture in batches in hot oil until golden brown. Serve garnished with sprouts, spring onions, or cress, if desired. A crème fraîche or yogurt dip would also be a good addition.
