Celery-mandarin jam with cranberries

Ingredients for 1 servings:

  • 100 g celeriac
  • 360 g mandarin orange(s), from the can, drained and weighed
  • 20 g cranberries
  • 250 g gelling sugar, 2:1
  • 1 lemon(s), juice
  • 1 bag(s) of citric acid

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Makes approx. 2 glasses of 250 ml each

Clean the celery, cut it into small pieces, and cook it with a little water until tender, then place it in a food processor. Add the drained mandarins and cranberries and chop everything until the desired consistency is reached. Place the mixture in a saucepan with the gelling sugar, lemon juice, and citric acid, stir well, and bring to a boil. Then reduce the heat to low and simmer for about 8-10 minutes. Pour the hot mixture into small jars (twist-off), seal immediately, and let cool. The cellar is still ideal for storage.
