Ingredients for 1 servings:

  • 300 g flour
  • 50 g powdered sugar
  • 2 packets of vanilla sugar
  • 250 g margarine
  • Drops of flavoring (bitter almond baking oil)
  • 300 g marzipan, raw mass
  • 70 g powdered sugar
  • 1 tbsp liqueur (almond liqueur)
  • Drops of flavoring (bitter almond baking oil)
  • 150 g apricot jam
  • 1 egg white
  • 100 g powdered sugar
  • Food coloring, yellow

Instructions

Working time approx. 50 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 50 minutes

Cookies with marzipan

Quickly knead the dough ingredients, wrap in cling film, and chill for one hour. Roll out between cling film portions to a thickness of 2 mm. Cut out stars and place on a baking tray lined with baking paper. Bake in a preheated oven (175°C, Gas Mark 2) for about 15 minutes. Knead the marzipan mixture with the powdered sugar, almond liqueur, and cooking oil. Roll out the mixture thinly between cling film and cut out stars. Strain the jam through a sieve and let it simmer for 3–4 minutes. Spread the jam over the cooled cookies and place a marzipan star on each one. Fold the powdered sugar into the stiffly beaten egg whites, then color it yellow with food coloring. Brush the stars with icing and let it dry.
