Ingredients for 3 servings:
- 500 g salmon (sushi quality)
- 1 cup lemon juice, from fresh lemons
- 1 red bell pepper(s)
- 1 bell pepper(s), green
- 2 onions
- 1 bunch coriander, fresh
- salt and pepper
- 3 tbsp olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes
with salmon, simple, no frills
Prepare the salmon by removing all bones and cutting into 0.5 cm pieces. Toss with the lemon juice and let it sit in the refrigerator for 15 minutes. Meanwhile, dice the bell peppers very finely, dice the onion or slice it into very fine rings, and finely chop the cilantro. Mix everything with the salmon and let it rest in the refrigerator for 1 hour. Before serving, add salt and pepper to taste and stir in the olive oil. This is a lovely, light summer dish. Serve with white bread and cold white wine.
