Chai Latte Cookies with Chocolate Center

Ingredients for 1 servings:

  • 200 g dark chocolate
  • 200 g wheat flour type 405
  • 1 pinch of salt
  • 1 egg(s)
  • 125 g butter, very soft
  • 175 g sugar
  • 40 g drink powder (Chai Latte powder), soluble
  • 1 tsp, leveled baking powder
  • 1 tbsp cocoa powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

Preheat the oven to 180°C (top/bottom heat). Line two baking sheets with baking paper. First, break 100g of chocolate into 30 pieces. Melt the remaining 100g over a double boiler or in the microwave and let cool slightly. In a small bowl, thoroughly mix the chai latte powder, flour, salt, cocoa powder, and baking powder with a wooden spoon. In a second, larger bowl, cream the butter with a hand mixer until creamy, add the sugar, and continue mixing. Mix in the egg and finally the melted chocolate. Once everything is well blended, add the flour in three or four portions. Only work until all ingredients are incorporated. The dough has a nice, smooth, and easily moldable consistency. I use disposable gloves for the next step, but you don’t need to. Scoop out 30 portions of the dough (I used about 25 grams) and form small, round flatbreads in the palm of your hand. Place a piece of chocolate in the center and fold the dough in on all sides. Then, gently press down with both hands to form them into balls. Place them on the baking sheets, spaced 5 centimeters apart, and bake for 10-12 minutes. Always remember that cookies are extremely soft straight from the oven and will only harden slightly upon cooling. Let the cookies rest on the sheet for 5 minutes, then transfer them, along with the parchment paper, to a wire rack and let them cool completely.
