Chai Latte Ice

Ingredients for 4 servings:

  • 200 ml cream
  • 200 ml milk
  • 100 g sugar
  • 1 packet of Bourbon vanilla sugar
  • 4 egg yolks
  • 2 tbsp drink powder (chai latte powder)
  • 1 tbsp water, hot
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cream ice cream with chai latte

Place the cream, milk, 50g sugar, vanilla sugar, and salt in a saucepan and heat gently, stirring occasionally. Vigorously whisk the egg yolks with 50g sugar until the sugar has dissolved. Once the cream is hot, gradually stir it into the egg yolk and sugar mixture. Heat the mixture again. Mix the chai latte powder with the hot water. Add the mixed chai latte and stir vigorously. Allow the cream to cool. If you’re in a hurry: Cooling can be accelerated by placing it in a cold water bath. Preparation in an ice cream maker: Pour the cream into the ice cream maker and freeze for approx. 30-40 minutes, depending on the machine. Preparation without an ice cream maker: Pour the cream into a freezer-safe plastic container and freeze for approx. 4-5 hours. After approx. 1 hour, mix vigorously with a whisk or hand blender. Repeat this process every hour. Yields approx. 650ml of ice cream.
