Cheese and cream cake with tangerines

Ingredients for 1 servings:

  • 2 eggs
  • 100 g sugar
  • 100 g flour
  • 2 packets of vanilla sugar
  • ½ tsp baking powder
  • 500 g quark
  • 125 g sugar
  • 375 ml cream
  • 1 can of tangerine(s)
  • 1 pack of white gelatin
  • 3 tbsp rum
  • Fat and breadcrumbs for the mold

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Beat the eggs with sugar and vanilla sugar until frothy. Combine the flour and baking powder, sift over the mixture, and beat until smooth. Grease a springform pan, sprinkle with breadcrumbs, and pour the batter into it. Bake at 200°C for 10-20 minutes, let it cool, and place a ring of aluminum foil around the base. Beat the quark with the sugar and rum until frothy. Whip the cream until stiff peaks and fold in. Let the gelatine swell, dissolve, and stir in. Drain the mandarin orange segments, reserving 12, and mix the remaining segments with the quark. Spread this mixture onto the cake base. Once the quark mixture has set, top with the mandarin orange segments and remove the aluminum foil.
