Cheese and cucumber salad

Ingredients for 4 servings:

  • 200 g leaf salad of your choice
  • 1 jar of pickles
  • 100 g cheese, e.g. Emmental, in one piece
  • 6 tbsp white wine vinegar
  • 4 tbsp oil
  • 2 tsp mustard
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Chop the lettuce, wash it and put it in a bowl. Cut the cheese into small sticks and add it to the salad. Cut the gherkins lengthwise into two slits, then cut the cucumber quarters into small pieces. For the dressing, mix the vinegar and oil in a small bowl and stir in the mustard. Season with salt and pepper and pour it over the salad. Toss everything well and let it sit overnight if you like. Only add the leaf salad just before serving, otherwise it will get mushy. A baguette goes well with it. Tip: You can vary the leaf salad to your liking. If you like, use a head of lettuce; then half a head is enough. I like to use the packaged one because it contains a mix of different varieties.
