Cheese and kohlrabi soup with minced meat

Ingredients for 4 servings:

  • 3 kohlrabi with leaves
  • 500 g minced meat, mixed or beef
  • 1 liter of broth
  • 1 cup crème fraîche
  • 400 g herb cheese spread
  • 1 onion(s)
  • 1 garlic clove(s)
  • e.g. salt and pepper
  • 1 dashes lemon juice

Dice the onion and garlic. In a pan, fry the minced meat with the diced onion and garlic until crumbly. In the meantime, trim the kohlrabi, removing any woody parts, and cut the kohlrabi and leaves into bite-sized pieces. When the minced meat is lightly browned, add the kohlrabi and leaves and pour in the broth. Simmer the soup over low heat until the kohlrabi is soft or firm to the bite. Then add the cup of crème fraîche and dissolve the cheese in the soup. Bring everything back to a boil briefly, taste, and adjust seasoning to taste. A squeeze of lemon juice completes the soup. Serve with potatoes, rice, or pasta, or simply eat it on its own.
